  • Comal – This cast iron tortilla pan works great for making the flatbread. It tolerates getting nice and hot without needing any oil. Or, use a regular cast-iron skillet.
  • Rolling pin – Using a mini rolling pin works well when rolling out these flatbreads, but any rolling pin will do.
  • Cutting board— If you have a glass, smooth cutting board now is the time to use it. They work well for rolling out the dough. Pastry mats also work well.

  • EGG AND CHEESE SAUERKRAUT FLATBREAD RECIPE INGREDIENTS:

  • Sourdough Flatbread: You need sourdough flatbread rounds for this breakfast. Don’t worry, I have a great recipe for you. Prepare it at least two days ahead and freeze what you don’t use for future breakfasts, snacks, and other great meals.

  • Cultured Olive Butter: I have a recipe for this as well. I highly recommend using it. Don’t worry though. If you haven’t ventured into butter making yet you can still use whatever oil you prefer for cooking your sunny eggs. Ghee or coconut oil also work.

  • Turmeric: Ground turmeric here.
  • Sea Salt: A mineral sea salt works nicely.
  • White Cheddar: Strong white cheddar complements these wraps.
  • Eggs: Use organic soy free eggs or organic pastured raised eggs when possible. Or, just get your favorite large eggs for this recipe.
  • Spinach: Rinse it and keep it raw.
  • Ripe Avocado: Hass or Reed sound good.
  • Sauerkraut: I recommend homemade for this too (yes, HoneySalt and Olive has a recipe for sauerkraut as well). If you don’t have any made, choose a probiotic-rich raw version from your local store.

Egg and Sauerkraut Flatbread Breakfast

Description

Launch the day with sourdough whole grain flatbread, raw white cheddar, turmeric topped protein, gut-friendly probiotic ferments, and simple green goodness from creamy avocado paired with spinach.


Ingredients

  • 1 teaspoon cultured olive butter
  • 4 eggs
  • Turmeric, to taste
  • Sea salt, to taste
  • 1/2 cup shredded white raw cheddar
  • 1 cup spinach, chopped
  • 2 avocados, sliced
  • optional: raw sauerkraut

Instructions

Instructions for Flatbread:

  1. Heat a dry cast-iron comal/griddle until very hot.
  2. In the meantime, use a light dusting of flour on each side of the flatbread to roll it out to approximately 1/8 inch thick.
  3. Cook each of them for approximately 45 seconds to 1 minute on the first side and 30 seconds on the second side, or until the flatbread lightly browns.

 

Instructions for Filling:

  1. Heat another cast-iron frying pan on medium. Add 1 teaspoon Cultured Olive Butter. Reduce the heat to medium-low. Immediately add the 4 eggs.
  2. Sprinkle the eggs with a light dusting of turmeric and sea salt to taste.
  3. Once set, flip and continue to cook until desired yolk texture is achieved and whites are cooked through.
  4. Place the egg and a bit of white raw cheddar cheese on the flatbread while it’s warm.
  5. Top the egg with chopped spinach, sliced avocado, and Raw Sauerkraut (optional).

Notes

Once you get the hang of making these, you can make the flatbread and the filling at the same time and enjoy your wrap all warm and melty. Otherwise, use a cotton towel to wrap the flatbread and keep it warm, if necessary.

Optional: Top with Raw Sauerkraut.
