Ingredients

Pan Prep:

  • Butter
  • Einkorn flour

 

Dry Ingredients:

  • 275 grams whole wheat einkorn flour
  • 1 1/4 teaspoons baking powder
  • 1 1/4 teaspoons baking soda
  • 1 teaspoon sea salt

 

Liquid Ingredients:

  • 3 large ripe bananas
  • 2/3 cup olive oil
  • 3/4 cup maple syrup
  • 3 eggs, separated
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon apple cider vinegar

Instructions

  1. Pre-heat the oven to 400°.
  2. Prepare a 12” cast-iron skillet by coating it with butter first and then einkorn flour.
  3. Sift all the dry ingredients including 275 grams whole wheat einkorn flour (include the germ and bran), 1 ¼ teaspoons baking powder, 1 ¼ teaspoons baking soda, and 1 teaspoon sea salt into mixing bowl. Mix well.
  4. In a separate large bowl, mash 3 large ripe bananas. Then, add 2/3 cup olive oil, ¾ cup maple syrup, 3 egg yolks (place the 3 egg whites in a separate bowl large enough to handle a hand mixer), 1 teaspoon vanilla extract, and 1 teaspoon apple cider vinegar. Mix well.
  5. In a separate mixing bowl, beat the 3 egg whites until peaks form.
  6. Add the dry ingredients to the banana mix in the large bowl. Stir until just combined.
  7. Using a soft spatula, quickly, yet gently, fold the egg white mixture into the batter in the large mixing bowl.
  8. Pour the batter into the coated 12” cast iron skillet.
  9. Place the cake into the oven.
  10. Immediately reduce the heat to 340°. Bake for 38-40 minutes.

Notes

  • You’ll need three mixing bowls for this recipe. One small, one medium, and one large.
  • Optional: Add 1- 2 cups chopped walnuts and 1 teaspoon ground cinnamon for another variation.
