Delightful Einkorn Sugar Cookies for healthier bakes, family fun, and gifts for friends!


Ingredients

  • 8 tablespoons unsalted butter, softened
  • 1/2 cup maple sugar
  • 1 tablespoon raw honey
  • 1 large egg, room temperature
  • 1/4 teaspoon apple cider vinegar
  • 1/8 teaspoon almond extract

 

  • 2 1/2 cups all-purpose einkorn flour (300 grams)
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla bean powder
  • 1/4 teaspoon sea salt

Instructions

  1. Bring 1 large egg to room temperature by setting out or rinsing with warm water (not hot).
  2. Place 8 tablespoons unsalted softened butter and ½ cup maple sugar in a bowl. Beat until creamy.
  3. Add 1 tablespoon honey, 1 egg (room temperature), ¼ teaspoon apple cider vinegar, and 1/8 teaspoon almond extract. Beat until smooth.
  4. Mix 300 grams (2 ½ cups all-purpose einkorn flour), 1 teaspoon baking powder, ½ teaspoon vanilla bean powder, and ¼ teaspoon sea salt.
  5. Sift the dry ingredients into the wet ingredients. Use a mixer and beat just until the dough is smooth.
  6. Refrigerate dough for at least 1 hour.
  7. Preheat the oven to 375°.
  8. Roll out dough ¼” thick. Cut into shapes. Freeze shaped cookie dough on a parchment lined baking sheet (or tray) for 15 minutes before placing them in the oven on the parchment lined baking sheet.
  9. Bake at 375° for 9-10 minutes.

Notes

If you freeze the dough longer than the suggested 15 minutes the baking time may extend a bit.
