Easy Rosemary Chicken Drumsticks and Thighs

Description

Bake these easy rosemary chicken drumsticks as the main thing or pull the chicken off the bone and use it in salads, grain bowls, tacos, soups, and anything else you dream up.


Ingredients

  • 1 large package chicken drumsticks and thighs (approximately 4 pounds)
  • 1 tablespoon + 1 teaspoon sea salt
  • 1 tablespoon rosemary leaves, grind using mortar and pestle
  • 1 tablespoon ground sweet paprika

Instructions

  1. Set the chicken out at room temperature for 10-20 minutes.
  2. Pre-heat the oven to 400°.
  3. Grind the rosemary leaves using a mortar and pestle.
  4. Spread the chicken out on a rimmed baking sheet.
  5. Sprinkle ½ tablespoon + ½ teaspoon sea salt, ½ tablespoon rosemary, and ½ tablespoon ground sweet paprika over the chicken.
  6. Flip the chicken over and sprinkle the remaining spices (½ tablespoon + ½ teaspoon sea salt, ½ tablespoon rosemary, and ½ tablespoon ground sweet paprika) evenly over the other side.
  7. Bake the drumsticks & thighs for approximately 50-55 minutes at 400° or until chicken reaches an internal temperature of 185° (check multiple pieces).

Notes

If you prefer a spicy version, use hot paprika instead of some of the sweet paprika, or add a dash of cayenne pepper to each piece.
