Scale
- 8 cups (64 ounces) filtered water
- 4 green cardamom pods and seeds, coarsely ground/bruised in a mortar and pestle
- 1/4 cup dried hibiscus flowers
- 1/3 cup raw honey (a generous 1/3 cup)
Instructions
- Using a mortar and pestle, split the cardamom pods open and bruise the seeds and pods.
- Bring 8 cups (64 ounces) filtered water, and the coarsely ground/bruised 4 green cardamom pods and seeds to a soft boil.
- Reduce the heat and simmer for 15 minutes.
- Remove the pan from the heat and add ¼ cup dried hibiscus flowers.
- Cover the pan and steep the tea for 7 minutes.
- Strain it through a fine mesh strainer into a large bowl.
- Let it cool for 5 minutes.
- Sweeten it by stirring in 1/3 cup raw honey (a generous 1/3 cup—it’s ok if it’s overflowing).
- Pour the tea into glass canning jars, seal, and refrigerate overnight. Serve cold.
Notes
- Make the 1/3 cup honey generous. Dip the overflowing cup of honey straight into the tea (if the cup is heat safe) and stir.
- Refrigerate the tea to cool. Remember adding ice to cool the tea weakens the flavor.
