Erika’s Cooking Journey

Over twenty-two years ago, I looked at the fast-food burrito I held in one hand, and then at my sweet, newborn daughter cradled in my other arm. That [fast-food] can’t be good, I thought. Later, I listened to some lectures on health food and the real journey and research began. Some of the healthy eating no no’s had made themselves comfortable in my pantry. Over time I kicked them out and chose better options. I learned more about beneficial ingredients and developed a taste for cleaner, more helpful foods. Yes, I still grab a not-so-healthy something or other on occasion, but for the most part I cook at home from carefully selected ingredients. I look forward to sharing these healthy recipes with you. Hopefully they help you enjoy cooking from scratch and eating homemade, nutrient-rich meals.

WHY COOK?

Eating food filled with nutrition helps us feel stronger. In addition to making foods capable of nourishing the body, preparing and enjoying healthy food with others creates opportunity for conversation, connection, celebration and memory-making. It’s worth taking the time. Fellowship around food often leads to cherished moments with friends and family. Let’s enjoy preparing and eating the food God provides with the people God has blessed us with. Oh yeah, and don’t forget to turn up the music while you cook!

WHAT KIND OF FOOD?

The recipes found on HoneySalt and Olive help us, our friends, and our families eat primarily homemade, nutrient-rich foods. Some recipes will scoot right along, but many will take time and planning. We can enjoy the longer process of cooking when possible, knowing we also have plenty of quick recipes tucked away when life requires them.

HoneySalt and Olive recipes often pull excellent ingredients from two well-known worlds. The best of Mediterranean ingredients and the best of nutrient-dense farmhouse foods (food you might find on the farm, the ranch, or the homestead) offer us a great selection for crafting craveable food. They include heritage foods like these:

  • Cold-cured, sea-salt brined olives
  • Raw honey
  • Sea salt
  • Extra virgin olive oil
  • Kefir
  • Einkorn sourdough bread
  • Cultured butter
  • Fermented vegetables
  • Beef, bison, chicken, and organ meats
  • Beans & legumes
  • Organic greens
  • Wild caught salmon
  • Berries
  • Herbs and spices

  • Nuts & seeds

  • Root vegetables and more…

In the HoneySalt and Olive world of food one recipe often leads to another. Fluffy sourdough flatbreads become Egg & Cheese Sourdough Breakfast Wraps when they cradle golden fried eggs sizzled in scratch-made Cultured Olive Butter, Simple Sauerkraut, baby spinach, Hass or Reed avocado, and sharp cheddar cheese. Once you prepare certain base recipes making nutritious meals gets a bit easier.
